Where to find ingredients
Heart of palm (palmito) can be sourced in jars at local markets or specialized international grocery sections. Standard pantry items like flour, margarine, and aromatics are readily available at general food markets and local supply shops. If fresh heart of palm is unavailable, the canned variety is the standard and effective substitute.
Preparation method
- In a large mixing bowl, combine the flour, margarine, eggs, and salt until the mixture forms a soft, uniform dough.
- Roll out the dough and line individual pastry molds, ensuring the bottom and sides are fully covered.
- Set the prepared molds aside.
- In a saucepan over medium heat, heat the oil and sauté the minced garlic and onion until lightly golden.
- Add the diced heart of palm to the pan and sauté for a few minutes.
- Pour in the boiling water, season with salt and pepper to taste, and bring to a boil.
- In a separate container, dissolve the 200g of flour in the 2 cups of cold water, whisking well to ensure there are no lumps.
- Stir this mixture into the pan with the heart of palm, stirring constantly until the filling thickens into a creamy consistency.
- Simmer for about 2 minutes to allow the flavors to meld.
- Once the filling has cooled slightly, fill the prepared dough-lined molds.
- Cover the tops with a disc of dough, sealing the edges firmly to prevent leaking.
- Bake in a preheated oven at 180°C (356°F) for approximately 20-25 minutes, or until the pastry is golden brown and crisp.
