Where to find ingredients
Find fresh eggplants, cassava, and coconuts at local markets. Use high-quality coconut milk and standard vegetable stock available in any grocery aisle. As a substitute for fresh Brazilian cheiro-verde, use a mix of flat-leaf parsley and scallions.
Preparation method
- Cut the eggplants into small cubes and place them in a colander
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours
- Rinse the cubes well, gently squeeze to remove excess water, and set aside
- Cook the peeled cassava in water until very tender and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, pepper, and bouillon cube, cooking until browned
- Blend the cooked cassava with the coconut milk in a blender, stir into the sautéed mixture, adjust the salt, finish with chopped fresh herbs and serve hot
Observations
The eggplant bobó is an excellent, light alternative to the classic shrimp version, retaining all the rich texture with a cassava base. The secret to success is the resting time of the eggplant in salt, which removes the natural bitterness and ensures the perfect texture. It is a comforting, practical recipe for everyday meals, ideal for serving with fluffy white rice.
