Where to find ingredients
You can find these ingredients at local supermarkets or produce markets in Barbados. Look for fresh produce in the vegetable section and common pantry staples in the grocery aisles; palm oil is often found in international or specialty cooking oil sections.
Preparation method
- Cut the eggplants into small cubes, place them in a colander, sprinkle with salt, and let them rest for 3 hours
- Wash the eggplant cubes thoroughly, squeeze them gently to remove excess water, and set aside
- Cook the cassava in water until very tender and set aside
- Heat the palm oil and olive oil in a pan, sauté the garlic, onion, tomato, and bell pepper, then add the eggplant, bay leaf, black pepper, and vegetable stock cube until golden
- Blend the cooked cassava with the coconut milk in a blender, mix into the sautéed base, adjust the salt, finish with plenty of fresh parsley and green onions, and serve hot
Observations
The eggplant bobó is a fantastic meat-free alternative that retains its classic creaminess by using cassava. The key to success for this recipe is allowing the eggplant to rest with salt, which removes its natural bitterness and ensures the perfect texture. Served alongside white rice and a touch of okra, you will have an unforgettable main course.
