Extra virgin olive oil to taste
Sea salt to taste
Where to find ingredients
You can find fresh zucchini, limes, and coriander seeds at local Caribbean produce markets or neighborhood grocery stores. If you cannot find fresh coriander seeds, you may substitute with a small pinch of ground coriander, though whole seeds are preferred for texture.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush.
- Pat dry with a clean kitchen towel.
- Trim and discard the ends.
- Cut the zucchini crosswise to separate the thicker portion from the thinner end.
- Halve the thick part lengthwise and slice each half into three strips to create sticks.
- Divide the thin end crosswise so all pieces are of a similar size.
- Cut each of these remaining pieces into four wedges.
- Heat a non-stick frying pan over medium heat.
- Add a drizzle of olive oil and arrange the zucchini pieces cut-side down.
- Grill for about 2 minutes until they are golden brown.
- Lightly crush the coriander seeds in a mortar to release their aroma.
- Flip the sticks using tongs to brown the opposite side.
- Add the crushed coriander seeds, season with salt, and add another drizzle of olive oil.
- Sauté for another minute until the zucchini is tender and well-seasoned.
- Turn off the heat and stir in the lime juice to finish.
- Serve immediately.
