Freshly ground black pepper to taste
1 onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon ground cumin
1 bay leaf
1 cup dry brown or green lentils
3 cups water
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
You can find all these ingredients at local supermarkets or grocery stores across Barbados. Dried brown or green lentils are typically found in the pulse or grains aisle. Fresh aromatics like onions and garlic are available in the produce section. Use standard dried bay leaves found in the spice aisle and ground cumin from the herbs and spices section. If you cannot find a specific type of lentil, standard brown lentils are the most accessible and hold up well to pressure cooking.
Preparation method
- Finely dice the onion and mince the garlic cloves
- Heat the olive oil in your pressure cooker over medium heat
- Sauté the onion with a pinch of salt until it turns soft and lightly golden
- Stir in the minced garlic
- Add the ground cumin and the bay leaf to the pot
- Cook for about one minute until the spices release their fragrant aroma
- Add the lentils to the pot
- Season with freshly ground black pepper and one teaspoon of salt
- Stir well to coat the lentils evenly in the seasoned oil
- Pour in the water
- Seal the lid and increase the heat to high
- Once the pressure cooker reaches full pressure and begins to whistle or hiss
- Reduce the heat to the lowest setting
- Cook for 5 minutes
- Remove from the heat
- Allow the pressure to release naturally before carefully opening the lid
- Serve your lentils while hot
Observations
Using a pressure cooker is the most efficient way to get perfectly tender, creamy lentils in just a few minutes. The addition of cumin elevates the flavour, making this a hearty and wholesome accompaniment that is easy to whip up for your daily meals.
