Ingredients
1/2 large bunch escarole
1/3 cup roasted, skinless and unsalted peanuts
2 garlic cloves
Olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste
1/3 cup roasted, skinless and unsalted peanuts
2 garlic cloves
Olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste
Where to find ingredients
Escarole may be found in larger supermarkets, produce markets or greengrocers; if unavailable, chicory or another slightly bitter leafy green can be used as a substitute, keeping escarole as ideal. Peanuts, garlic, olive oil, cayenne pepper and salt are available in supermarkets and general food shops.
Preparation method
- Separate the escarole leaves and wash them carefully under running water
- Dry the leaves using a salad spinner to make sure they are very dry
- Stack about 5 leaves, roll them into a cylinder and cut into strips of about 3 cm
- Press the garlic cloves with the side of a knife to peel them, keeping them whole to flavour the olive oil
- Heat a large non-stick frying pan over medium heat
- Add a little olive oil, the peanuts, cayenne pepper and a pinch of salt
- Sauté the peanuts for about 3 minutes until lightly golden
- Remove the peanuts from the frying pan and reserve in a bowl
- In the same frying pan, still over medium heat, add 1 1/2 teaspoons olive oil and one garlic clove
- Sauté the garlic for 1 minute, just to perfume the oil
- Add half the escarole, season with a pinch of salt and sauté for 2 minutes
- Stir occasionally until the leaves are lightly toasted and keep their texture, avoiding the release of excess water
- Remove the first portion of escarole and repeat the same process with the remaining leaves
- Arrange the sautéed escarole on a serving dish and finish by sprinkling the spicy peanuts over the top before serving
Observations
This side dish brings a crunchy texture and a light touch of spice that lifts the flavour of the greens. It is an excellent option for varying everyday vegetable preparations.
