Pressure Cooker Artichokes (Alcachofra)

Ingredients

2 artichokes
2 tbsp butter
2 tsp white wine vinegar
Salt to taste

Where to find ingredients

You can usually find fresh artichokes in the produce section of larger supermarkets in Barbados, especially those that stock imported specialty produce. If you can't find them fresh, some high-end grocers may carry tinned or jarred artichoke hearts, but for this specific recipe, fresh whole artichokes are best. Butter and white wine vinegar are readily available in any local grocery store or corner shop.

Preparation method

  1. Trim off the artichoke stem if it's attached
  2. Place the artichokes upside down inside your pressure cooker
  3. Make sure the petals are facing towards the bottom of the pot
  4. Pour in enough water to cover the artichokes
  5. Don't go over the maximum fill line of your pressure cooker
  6. Lock the lid and bring it up to pressure on a high heat
  7. Turn the heat down to low as soon as the pressure cooker starts to whistle
  8. Let it cook for 10 minutes under pressure
  9. While that's cooking, melt your butter in the microwave for the dip
  10. Whisk the melted butter together with 2 tbsp of water and the white wine vinegar
  11. Stir in some salt to your liking
  12. Turn off the heat once the cooking time is up
  13. Wait for all the pressure to release naturally before opening the lid
  14. Take the artichokes out and serve them warm with the prepared butter dip

Observations

Artichokes are such an elegant and delicious vegetable to serve. Using a pressure cooker really speeds things up, making this a totally doable side dish for any night of the week. Serve them up with a simple butter dip to really bring out that lovely, natural taste of the petals.
