Where to find ingredients
You can find all ingredients at your local supermarket. Look for the 'calabresa' in the continental deli or smallgoods section; if unavailable, a high-quality smoked sausage is a suitable substitute.
Preparation method
- Blend the eggs, oil, grated cheese, milk and chicken stock cube in a blender until smooth.
- Add the flour and baking powder to the blender mixture and mix just enough to incorporate everything.
- Sauté the bacon with the calabresa, then add the shredded chicken, corn, peas, carrot and onion, mixing well with the parsley.
- Grease a baking dish with oil and flour, pour in half of the batter, distribute the filling on top and cover with the remaining batter.
- Finish assembly by decorating with tomato slices, a pinch of oregano and grated parmesan cheese to taste.
- Preheat the oven to a high temperature and bake the pie for approximately 35 to 40 minutes.
- Perform the skewer or fork test after 35 minutes.
- If it comes out clean, the pie is ready to be removed from the oven.
- Let the pie cool for a few minutes before slicing to ensure it is well structured when serving.
