Traditional Feijão Tropeiro Recipe (Feijão tropeiro)

Ingredients

500 g cooked carioquinha beans
200 g pork belly, diced
1 ladle oil
1 medium onion, chopped
4 cloves garlic
5 eggs
1 tablespoon garlic salt
Chopped spring onions and parsley to taste
200 g cassava flour

Where to find ingredients

Buy the ingredients at any local open market, supermarket, or neighbourhood provision store. Look for dried goods, eggs, butchery, and fresh herbs; if needed, use bacon as a substitute for toucinho, clearly marked as a substitute.

Preparation method

  1. In a pan, heat the oil and brown the chopped onion
  2. Add the diced pork belly and fry well until crispy
  3. Add the chopped garlic and garlic salt, sautéing for another minute
  4. Add the eggs and mix gently, cooking until set but not broken apart
  5. Stir in the cooked carioquinha beans
  6. Lower the heat and add the cassava flour little by little, stirring constantly so it does not clump and forms a moist farofa
  7. Finish with the chopped spring onions and parsley and mix well

Observations

Feijão tropeiro is a hearty, flavour-packed dish deeply rooted in Brazilian cooking, especially in the states of Minas Gerais and Goiás. Its origin goes back to the muleteer days, when travellers carried dry, long-lasting ingredients to prepare nourishing meals during long journeys. This recipe is ideal for anyone looking for a comforting dish that brings together the texture of beans, the crunch of fried ingredients and the moistness of farofa.

It is a complete meal that can be served as a main dish or as a side, and it appeals to every palate with its distinctive mix of flavours and textures. The simplicity of the method, combined with the tasty final result, makes feijão tropeiro a timeless classic.
