Where to find ingredients
Find quality long-grain rice and fresh produce, specifically limes and onions, at local open-air markets or neighborhood grocery stores. Use standard extra virgin olive oil available in the condiment aisle.
Preparation method
- Peel the onion and chop it into very small pieces.
- Pour the water into a kettle and bring it to a boil over low heat.
- Place a medium pot over low heat.
- Add the olive oil and the chopped onion.
- Season with a pinch of salt.
- Sauté for about 2 minutes until the onion is soft.
- Add the bay leaf and the rice to the pot.
- Stir for approximately 1 minute so the grains are well coated in the oil, which ensures a fluffy result.
- Measure 2 cups of the boiling water and pour it over the rice.
- Season with the remaining salt and stir.
- Increase the heat to medium.
- Avoid stirring from this point on.
- Wait for the water level to reach the level of the grains.
- Reduce the heat and partially cover the pot.
- Cook until all the water has been absorbed.
- Check the bottom of the pot with a fork to confirm all the water has dried up.
- Turn off the heat.
- Add the lemon zest.
- Cover the pot completely.
- Let the rice steam and rest for 5 minutes.
- Use a fork to fluff the grains and incorporate the zest.
- Transfer to a bowl and serve immediately.
