Where to find ingredients
Look for the ingredients in the rice, fresh produce, dairy, and pantry sections of supermarkets, neighbourhood markets, and open-air markets. If needed, substitute grated Parmesan with a similar hard grating cheese.
Preparation method
- Put the water, salt and a drizzle of oil in a saucepan and bring to the heat
- As soon as the water comes to a boil, add the rice, previously washed and drained
- Stir lightly
- Lower the heat
- Cook until all the water has been absorbed
- Turn off the heat
- Keep the pan covered for a few minutes to finish cooking
- In another pot, melt the butter and sauté the raisins
- Transfer the raisins to a large bowl
- Add the chopped spring onion, carrot, bell pepper and onion
- Add the parsley and grated Parmesan cheese
- Place the cooked rice over the ingredients in the bowl
- Mix all the ingredients gently so they are well combined
