Simple Homemade Rice Risotto

Ingredients

1 bunch chopped spring onions or parsley
200 g shredded chicken
Salt to taste
1.5 litres boiling water
1 tin peas, drained
2 crushed garlic cloves
2 cups rice
1 beef rib stock cube
1 tin sweetcorn, drained
200 g grated cheese
20 ml soya oil

Where to find ingredients

Rice, tinned peas, tinned sweetcorn, salt, garlic, stock cubes, grated cheese and soya oil are available in supermarkets, neighbourhood grocery shops and open markets. Cooked chicken can be shredded from boiled or roasted chicken bought from the meat section or prepared at home. Spring onions and parsley are found with fresh vegetables and herbs.

Preparation method

  1. In a large pot, add the oil, crushed garlic and beef rib stock cube
  2. Fry the garlic and stock cube in the oil over medium heat until fragrant
  3. Add the rice to the pot and fry for about 2 minutes, stirring well so the grains are coated in the seasoning
  4. Pour the boiling water into the pot and season with salt to taste
  5. Stir everything together
  6. Cover the pot and cook over medium heat until the rice has absorbed almost all the water and is beginning to dry
  7. When the water is almost dry, reduce the heat to the lowest setting
  8. Add the sweetcorn and peas, both drained, and the shredded chicken to the pot
  9. Mix gently to combine the ingredients with the rice
  10. Add a little more boiling water if the rice is still hard or the mixture looks too dry
  11. Leave to cook over low heat with the pot partly covered until the rice is tender
  12. When the risotto is ready and has the consistency you want, turn off the heat
  13. Sprinkle the grated cheese and chopped spring onions or parsley on top before serving
