Ingredients
1 litro of whole milk
3 tablespoons of white vinegar
1 colher of sopa of margarine
Salt to taste
3 tablespoons of white vinegar
1 colher of sopa of margarine
Salt to taste
Where to find ingredients
Look for Brazilian ingredients such as requeijão, goiabada, guaraná soda, calabresa, cassava flour, tapioca starch, cachaça and jiló in Brazilian or Latin American grocers, international food shops, gourmet supermarkets and online speciality grocery sections. Standard produce, dairy, meat and pantry items are usually available in supermarkets, wet markets and neighbourhood grocery stores. If needed, use only clearly labelled substitutes here: cream cheese for requeijão, chorizo-style smoked sausage for calabresa, and panko or dry breadcrumbs where farinha de rosca is unavailable.
Preparation method
- Take o leite para ferver in a pan
- Remove cerca de dois dedos de leite fervido e reserve em um copo
- Ao leite restante na panela, adicione as 3 colheres de sopa de vinagre e misture well
- Let o leite talhar completamente
- Descarte o soro do leite talhado, separando apenas a dough do cheese
- Place a dough do cheese em um liquidificador
- Add o leite reservado, a margarine e o sal to taste
- Bata todos os ingredientes in a blender por alguns minutos, until obter uma consistência homogênea e cremosa
- Transfer o requeijão para um pote ou recipiente
