Extra virgin olive oil to taste
Salt and freshly ground black pepper to taste

Where to find ingredients
Find fresh, firm tomatoes and high-quality extra virgin olive oil at local produce markets (sabzi mandi) or premium supermarket produce sections. Fresh basil can be found in the herb section of gourmet grocery stores or local urban gardens.
Preparation method
- Wash and thoroughly dry the tomatoes.
- Remove the top stems from each tomato.
- Place the tomato with the cut side facing down on your chopping board.
- Cut in a cross pattern and then an X pattern to obtain 8 even wedges.
- Place the tomato wedges in a sieve or colander set over a mixing bowl.
- Sprinkle the coarse salt over them and toss well so each piece is evenly coated.
- Cover the container with cling film or a plate.
- Refrigerate for 24 hours to allow the tomatoes to drain and firm up their texture.
- If you need to serve sooner, allow them to drain for at least 30 minutes.
- Remove from the refrigerator just before serving.
- Discard the accumulated liquid from the bowl.
- Gently shake the wedges to remove any excess coarse salt.
- Arrange the tomato wedges on a serving platter.
- Finish by drizzling with olive oil and seasoning with black pepper.
- Scatter the fresh basil leaves over the top and serve immediately.
Observations
In this dish, the tomato takes center stage. A specific salting and draining process is used to enhance the texture and concentrate the flavor, resulting in a light, aromatic side dish that pairs perfectly with any meal.
