75g butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly ground black pepper to taste
2 cups yellow corn flour (flocada)
75g butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
You can find plantains at most local vegetable markets or produce aisles in supermarkets. Yellow corn flour (flocada) is typically found in the specialty grains or international aisles. Use high-quality butter from dairy sections. If 'farinha de milho flocada' is unavailable, standard coarse cornmeal can be used as a substitute, though the texture will differ.
Preparation method
- Trim the ends of the plantains and peel them.
- Cut each plantain in half lengthwise.
- Slice each half again lengthwise.
- If the resulting strips are too thick, slice them into three smaller pieces.
- Dice each piece of plantain into roughly 1 cm cubes.
- Heat a large, non-stick frying pan over medium heat.
- Add the vegetable oil to the pan.
- Add the diced plantains to the pan and season with a pinch of salt.
- Sauté the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. Note that timing may vary based on ripeness; riper plantains will brown faster.
- Reduce the heat to low.
- Add the butter cubes to the pan and stir until completely melted.
- Season with 1 teaspoon of salt and black pepper to taste.
- Gradually fold in the corn flour, stirring continuously with a spatula to ensure it is well incorporated.
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden.
- Turn off the heat and serve the farofa immediately.
