Ingredients
100 g of dehydrated desiccated coconut
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
Where to find ingredients
You can find all these ingredients in the baking aisle of any local supermarket. Use high-quality desiccated coconut and ensure your eggs are at room temperature for the best results.
Preparation method
- Mix the desiccated coconut with the warm water in a small bowl
- Let the coconut rest for about 5 minutes until it is well hydrated
- Place the hydrated coconut, eggs, egg yolks, sugar and butter in a blender and pulse just enough to combine
- Grease a 1.5-litre microwave-safe dish with butter and sprinkle with sugar, then pour in the mixture
- Microwave on medium power for 9 to 12 minutes until the Quindão starts to set
- Remove from the microwave, let it cool slightly and carefully unmould onto a serving plate
- Wait for it to cool completely before serving to ensure the ideal texture
Observations
The Quindão is a larger and very popular variation of the traditional Quindim. This simplified version uses the microwave to ensure speed without sacrificing the characteristic flavour of coconut and eggs. Tip: use a microwave-safe mould to ensure even cooking.
