Ingredients
1 tin (397g) condensed milk
500 ml whole milk
4 large free-range eggs
500 ml whole milk
4 large free-range eggs
Where to find ingredients
You can pick up standard tinned condensed milk in the baking aisle of any Irish supermarket like Dunnes, Tesco, or SuperValu. Fresh whole milk and high-quality free-range large eggs are found in the dairy section of your local shop.
Preparation method
- Combine the condensed milk and whole milk in a wide, heavy-bottomed saucepan
- Place the pan over a medium heat and bring the liquid to a gentle boil
- In a separate bowl, whisk the egg whites until stiff peaks form
- Gradually whisk the egg yolks into the beaten whites, one at a time, until you have a smooth, light mixture
- Gently fold the egg mixture into the simmering milk in the saucepan
- Maintain the heat at a low level to allow it to cook through
- Once the base is set and firm, use a slotted spoon to carefully cut the mass into pieces
- Turn the pieces over gently to ensure the custard cooks evenly on all sides
- Remove from the heat and transfer the ambrosia to a serving dish
- Leave to cool down completely, then chill in the fridge before serving
Observations
This classic Brazilian sweet perfectly balances the richness of condensed milk with the airy lightness of whisked eggs. It’s a nostalgic treat that shines when served cold, making it a perfect, no-fuss dessert to whip up for the family.
