Where to find ingredients
You can find all these ingredients at standard Irish supermarkets like Dunnes Stores, Tesco, or SuperValu. For the condensed milk, check the baking aisle. Instant coffee is readily available in any tea and coffee section. If you are looking for specific Brazilian ingredients or higher-quality coffee products, check the 'World Foods' aisle in larger supermarket branches or visit independent speciality grocers in major Irish cities.
Preparation method
- Caramelise the sugar directly in your pudding tin over low heat until golden, carefully tilting it to coat the base and sides evenly
- Place the eggs, condensed milk, milk, instant coffee, and the splash of liqueur (if using) into a blender
- Blitz everything together until you have a perfectly smooth, well-combined mixture
- Pour the custard base slowly into your caramel-lined tin
- Cover the top of the tin tightly with a layer of kitchen foil
- Bake in a bain-marie (water bath) in a preheated oven at 180°C for about 1 hour, or until the pudding is set and wobbly
- Remove from the oven and allow it to cool down to room temperature completely before moving it to the fridge
- Once thoroughly chilled, run a knife around the edges and invert the pudding onto a serving plate
- Serve well-chilled for the best consistency
