Ingredients
3 cups guava pulp, scooped from the fruit
¾ cup honey
1 cup water
Lemon juice to taste
¾ cup honey
1 cup water
Lemon juice to taste
Where to find ingredients
Guava pulp: Look for fresh, ripe guavas in local markets or supermarkets. If fresh is unavailable, some stores carry frozen fruit pulp in the freezer section. Honey: Readily available at any local grocer or market. Lemon: Locally sourced lemons are best, but any lime or lemon works for the acidic balance required.
Preparation method
- Place the guava pulp, honey, and water into a large saucepan
- Bring to a boil over medium-high heat
- Reduce the heat and let it simmer gently for 10 minutes
- Stir occasionally and use a spoon to skim off any foam that rises to the surface
- Transfer the mixture to a blender
- Pulse on low speed just enough to process the pulp without breaking up the hard seeds
- Place a fine-mesh sieve over a bowl and pour the purée through
- Press the mixture through the sieve with a wooden spoon to extract all the liquid, leaving the seeds and fibrous bits behind
- Discard the seeds and pulp residue remaining in the sieve
- Finish by stirring the lemon juice into the strained purée
