1 tin of milk (use the empty condensed milk tin as a measure)

1/2 cup of granulated sugar
1 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
6 tablespoons of cold water
1 tin of sweetened condensed milk
1 tin of milk (use the empty condensed milk tin as a measure)
2 pots of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
Where to find ingredients
You can find these ingredients at local supermarkets or grocery stores in Fiji. Look for condensed milk and gelatin in the baking aisle, and fresh red guavas in the produce section. If fresh guavas are out of season, high-quality guava paste or pulp can sometimes be found in the international or preserves aisle as a substitute.
Preparation method
- Hydrate the powdered gelatin in 6 tablespoons of cold water.
- Place the hydrated gelatin in a bain-marie until it is completely dissolved.
- In a blender, combine the sweetened condensed milk, milk, plain yogurt, and the dissolved gelatin.
- Pour the mixture into a ring mold that has been lightly dampened with water.
- Refrigerate for approximately 4 hours, or until the flan is firm.
- While the flan sets, prepare the coulis: peel the guavas and cut them into cubes.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guavas are very soft and beginning to break down.
- Remove the pan from the heat and transfer the contents to a blender; process until you have a smooth purée.
- Return the guava purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the coulis thickens.
- If the coulis becomes too thick during cooking, add the optional 1/2 cup of water to reach your desired consistency.
- Allow the guava coulis to cool completely before drizzling it over the chilled flan.
Observations
This yogurt flan with guava coulis is a traditional Brazilian dessert known for its light and refreshing profile, making it the perfect finale for any meal. The contrast between the silky, mild flan and the intense, fruity sweetness of the guava reduction is a crowd-pleaser.
