Carrot Rice

Ingredients

1 1/2 cups rice
1 carrot
1/2 onion
3 cups water
1 1/2 tablespoons olive oil
1 bay leaf
1 teaspoon salt

Preparation

  1. Wash and peel the carrot
  2. Grate the carrot using the fine side of a grater
  3. Dice the onion into small cubes
  4. Pour a little more than 3 cups of water into a kettle and bring to a simmer over low heat
  5. Heat a medium pot over low heat
  6. Add the olive oil
  7. Add the diced onion and grated carrot
  8. Season with the salt
  9. Sauté the vegetables for 2 minutes until they soften
  10. Add the rice and the bay leaf to the pot
  11. Stir well so that all the rice is coated in the oil
  12. Measure exactly 3 cups of the boiling water and pour it over the rice
  13. Give it one last stir and increase the heat to medium
  14. Avoid stirring the rice from this point on
  15. When the water reduces to the level of the grains
  16. Reduce the heat to the lowest setting
  17. Cover the pot partially
  18. Cook until all the water is absorbed
  19. Check for doneness by inserting a fork through the grains to the bottom of the pot
  20. Turn off the heat
  21. Keep the pot covered for another 5 minutes so the steam finishes the cooking process
  22. Fluff the grains gently with a fork
  23. Gently fold the carrots through the rice
  24. Transfer to a serving bowl and serve immediately

Notes

This dish is an excellent way to add color and nutrients to your basic rice side. The secret to fluffy rice is to sauté the grains well before adding the boiling water.
