Traditional Baião de Dois: A Simple and Flavorful Recipe

Ingredients

2.5 litres cold water
500g fresh green beans (shelled)
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio (smoked pork sausage), sliced
1 onion, grated
1 clove of garlic, minced
1/2 tablespoon fresh cilantro, chopped
2.5 cups long-grain white rice
150g queijo coalho (or firm halloumi as a substitute), thinly sliced

Where to find ingredients

Green beans (fresh or frozen) can be found in the produce aisle; paio sausage and queijo coalho are available at specialty Latin American grocers (halloumi can be used as a cheese substitute).

Preparation method

  1. Soak the green beans in water overnight
  2. The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the bouillon cubes
  3. Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender
  4. While the beans are cooking, heat the oil in a separate large pot
  5. Brown the sliced sausage, grated onion, and minced garlic in the oil
  6. Add the rinsed and drained rice along with the chopped cilantro to the pot and sauté for a few minutes
  7. Pour the cooked beans along with their cooking liquid into the pot with the rice
  8. Stir everything together, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy
  9. Arrange the slices of queijo coalho over the top of the rice
  10. Cover the pot again and let the residual heat melt the cheese for a few minutes
  11. Serve the Baião de Dois hot, optionally accompanied by pan-fried or roasted carne-de-sol
