Fluffy White Rice

Ingredients

1 tablespoon olive oil
1/2 onion, finely chopped
1 bay leaf
1 cup white rice
1/2 teaspoon salt
2 cups boiling water

Preparation

  1. Finely dice the onion
  2. Heat the water until it reaches a boil
  3. Warm a medium saucepan over low heat
  4. Add the olive oil and onion
  5. Add a pinch of salt
  6. Sauté the onion for 2 minutes until softened
  7. Add the bay leaf to the pan
  8. Add the rice and stir for 1 minute so the grains are coated in oil
  9. Pour the boiling water over the rice
  10. Season with the remaining salt and stir gently
  11. Increase the heat to medium
  12. Do not stir the rice from this point on
  13. Wait until the water level reaches the surface of the rice
  14. Reduce the heat to low and partially cover the pan
  15. Cook until all the water is absorbed
  16. Test for doneness by inserting a fork and pushing the grains aside at the bottom of the pan
  17. Keep on the heat for a few more moments if there is still moisture
  18. Turn off the heat and keep the pan covered for 5 minutes to allow the steam to finish the cooking
  19. Fluff the grains gently with a fork before serving
