Where to find ingredients
You can find fresh aubergines, cassava, and seasonal vegetables at local farmers' markets or the fresh produce sections of major supermarkets in Lusaka. Coconut milk is widely available in the international or baking aisles of local grocery stores.
Preparation method
- Cut the aubergines into small cubes and place them in a sieve
- Sprinkle salt over the aubergine and let it rest for 2 to 3 hours
- Rinse the cubes thoroughly, squeeze them gently to remove excess water, and set aside
- Boil the peeled cassava in water until very tender and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the aubergine, bay leaf, pepper, and stock, cooking until browned
- Blend the cassava with the coconut milk in a blender, stir it into the stew base, adjust the salt, garnish with parsley and spring onions, and serve hot
Observations
This aubergine stew is a brilliant, light alternative to the classic shrimp version, retaining all its signature creaminess thanks to a cassava base. The secret to success lies in letting the aubergine rest in salt, which removes any natural bitterness and ensures the perfect texture. It is a comforting, practical recipe for everyday meals, best served alongside a portion of fluffy white rice.
