Where to find ingredients
You can find fresh zucchini and lemons at local markets like Soweto Market or specialized vegetable stalls in supermarkets. Coriander seeds are typically available in the dry spice section of any grocery store. Olive oil and salt are pantry staples found in any food retail outlet.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush.
- Dry it with a clean tea towel.
- Trim and discard both ends.
- Cut the zucchini crosswise to separate the thicker end from the thinner one.
- Slice the thick part in half lengthwise and cut each half into three strips to create batons.
- Divide the thinner part in half crosswise so all pieces are of a similar size.
- Cut each of these pieces into four parts.
- Heat a non-stick frying pan over medium heat.
- Add a drizzle of olive oil and arrange the zucchini pieces cut-side down.
- Grill for about 2 minutes until they are golden brown.
- Lightly crush the coriander seeds in a mortar and pestle to release their aroma.
- Turn the batons over using tongs to brown the opposite side.
- Add the coriander seeds, season with salt, and drizzle with a little more olive oil.
- Sauté for 1 more minute until the zucchini is tender and well-seasoned.
- Finish by turning off the heat and stirring in the lemon juice.
- Serve immediately.
