Where to find ingredients
Mangoes are widely available in fresh produce markets and local grocery stores; choose ripe, sweet varieties. Natural yogurt can be found in the dairy section of any supermarket. Unflavored gelatin is typically stocked in the baking aisle or alongside dessert supplies. Fresh limes for the zest are a staple in most local fruit markets. Egg whites are sourced from fresh large eggs found in the poultry or refrigerated aisles of standard grocery retailers.
Preparation method
- Blitz the mango in a blender until you have a smooth purée
- Set the purée aside
- Whisk the egg whites in a mixer until they start to get foamy
- Gradually add the sugar while continuing to whisk until you reach stiff peaks
- Set the stiff egg whites aside
- Pour the water into a small bowl and sprinkle the gelatin over the top
- Let the mixture bloom for 1 minute
- Warm the gelatin in a bain-marie until it is completely dissolved
- Stir the dissolved gelatin into the mango purée
- Add the yogurt and lime zest to the purée and mix well until smooth
- Gently fold the stiff egg whites into the mango mixture using a spatula
- Divide the mixture among the individual dishes or pots
- Chill in the fridge for at least 4 hours before serving
- Finish by garnishing with thin mango slices right before serving
Observations
This recipe is a perfect way to finish a meal on a light note. Using stiffly beaten egg whites gives it an airy, delicate texture, while the yogurt adds a lovely balance to the sweet mango and the zesty hint of lime.
