Bread Pudding (Pudim de pão)

Ingredients

2 tablespoons sugar (for the caramel)
3 day-old bread rolls
500 ml milk
3 whole eggs
2 cups sugar
1 dessert spoon lemon zest

Where to find ingredients

Find standard baking ingredients, fresh eggs, and milk at local grocery stores or markets. Day-old bread can be sourced from local bakeries; as a substitute for standard bread rolls, any crusty white bread can be used.

Preparation method

  1. Prepare the caramel by melting the 2 tablespoons of sugar in a large ring mold.
  2. Spread the caramel well along the bottom and sides of the mold.
  3. Cut the bread rolls into slices approximately 2 cm thick.
  4. Arrange the bread slices at the bottom of the caramelized mold.
  5. Blend the milk with the eggs and the 2 cups of sugar in a blender until a homogeneous mixture is obtained.
  6. Incorporate the lemon zest into the liquid mixture.
  7. Pour the mixture over the bread pieces in the mold.
  8. Place in a preheated oven to bake in a bain-marie for 30 minutes.
  9. Remove from the oven and wait for it to cool slightly before unmolding carefully.

Observations

This recipe transforms simple ingredients into a delicious and creamy dessert. The secret lies in letting the bread fully absorb the custard mixture before placing it in the oven.
