500 g of green beans (feijão verde)
2 beef stock cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed

Where to find ingredients
You can find ingredients like long-grain rice, fresh onions, garlic, and vegetable oil in any local Nigerian market or supermarket produce and dry goods aisles. For authentic Brazilian staples, look for 'paio' and 'queijo de coalho' in specialized international grocery stores, or substitute the cheese with a firm, high-melting-point white cheese like Halloumi if necessary.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with the 2.5 litres of cold water and the beef stock cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are simmering, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio sausage, grated onion, and crushed garlic in the hot oil until golden brown.
- Stir in the washed and drained rice along with the chopped coriander, sautéing for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking liquid into the pot with the rice mixture.
- Combine everything well, cover the pot, and cook over low heat until the rice is tender and the dish maintains a moist, creamy consistency.
- Arrange the thinly sliced queijo de coalho over the top of the rice.
- Cover the pot once more and allow the residual heat to melt the cheese for a few minutes.
- Serve the Baião de Dois hot, optionally accompanied by fried or roasted carne-de-sol.
