Ingredients
1/2 cup strong brewed coffee
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups caster sugar
500 g raw peanuts in shell
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups caster sugar
500 g raw peanuts in shell
1 tablespoon cocoa powder
Where to find ingredients
You can find raw peanuts, both shelled and in-shell, in most supermarkets in the baking or snacking aisles. Look for whole spices like cinnamon sticks or ground cinnamon in the spice section. Good quality cocoa powder is also widely available. Strong brewed coffee is best made fresh at home, but you can use instant coffee dissolved in hot water if needed. Baking powder is a pantry staple, usually found near flour and other baking ingredients. Caster sugar is a fine-grained sugar readily available in all Irish supermarkets.
Preparation method
- In a saucepan, combine the sugar with the strong brewed coffee and heat over medium heat
- Stir continuously until the sugar dissolves and the syrup begins to thicken
- Add the raw peanuts in shell, cocoa powder, cinnamon, and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture starts to dry out and pulls away from the bottom of the pan
- As soon as it reaches a dry consistency, remove the pan from the heat
- Pour the peanut mixture onto a greased baking tray
- Place in a preheated oven at a very low temperature (around 120°C or 250°F) for approximately 15 minutes
- During the time in the oven, stir the peanuts occasionally to prevent them from sticking to the tray and to ensure even drying
- Remove from the oven and let cool completely before serving or storing
