Classic Beijos de Moça biscuits (Biscoitos beijos de moça caseiros)

Ingredients

1/2 cup cornflour
1/2 cup plain flour
1/2 cup caster sugar
100 g unsalted margarine
1/2 cup ground walnuts
100 g dark chocolate (minimum 50% cocoa)
2 tbsp corn syrup
3 tbsp whole milk
1 tbsp unsalted butter

Where to find ingredients

You can find cornflour, plain flour, caster sugar, and dairy products in the baking aisle of any major UK supermarket. For the dark chocolate and nuts, the 'world food' or 'baking' sections usually carry high-quality options. If unavailable, light agave syrup can be used as a substitute for corn syrup.

Preparation method

  1. In a large mixing bowl, combine the cornflour, plain flour, sugar, margarine, and ground walnuts until a uniform dough forms.
  2. Preheat your oven to 180°C (or 160°C for fan-assisted ovens).
  3. Lightly grease and flour a baking sheet.
  4. Shape the dough into small, even-sized balls and arrange them on the prepared baking sheet.
  5. Bake for approximately 10 minutes, or until the edges are just beginning to turn golden.
  6. While the biscuits are in the oven, prepare the filling by melting the chopped dark chocolate with the corn syrup, milk, and butter in a heatproof bowl set over a pan of gently simmering water (bain-marie).
  7. Stir constantly until you achieve a smooth, thick, and consistent chocolate cream.
  8. Remove the filling from the heat and allow it to cool until it reaches a spreadable consistency.
  9. Once the biscuits have completely cooled, sandwich them together in pairs with a generous spoonful of the chocolate filling.

Observations

Beijos de Moça, which translates to 'Maiden's Kisses', are a quintessential Brazilian treat cherished for their delicate texture and balanced flavour profile. The pairing of crisp, buttery shortbread with a rich chocolate centre makes these biscuits a perfect accompaniment for tea breaks or special occasions. This authentic method allows you to master these iconic biscuits in your own kitchen with ease.
