Classic coconut fudge balls: quick and simple (Beijinho de coco)

Ingredients

1 tin (395g) sweetened condensed milk
1 tablespoon unsalted butter
Caster sugar, for coating
Desiccated coconut, for coating
Whole cloves, for decorating (optional)
150g desiccated coconut (fine shreds)
Butter, for greasing your hands

Where to find ingredients

You can find sweetened condensed milk in the baking or tinned goods aisle of any major supermarket. For the desiccated coconut, check the 'Home Baking' section. If you have trouble finding the traditional fine shreds, you can use standard desiccated coconut; whole cloves are easily found in the spice aisle.

Preparation method

  1. In a heavy-based saucepan, combine the sweetened condensed milk and butter.
  2. Place over medium heat, stirring constantly to prevent the mixture from sticking to the bottom.
  3. Cook until the mixture reaches a soft fudge consistency, pulling away cleanly from the bottom of the pan when scraped.
  4. Stir in the 150g of desiccated coconut until fully incorporated into the mixture.
  5. Transfer the mixture onto a lightly buttered plate and spread it out so it cools more quickly.
  6. Place the plate in the freezer for approximately 35 minutes to allow the mixture to firm up.
  7. In a shallow dish, combine the extra desiccated coconut and caster sugar for coating.
  8. Lightly grease your palms with a little butter.
  9. Take small portions of the mixture using a teaspoon and roll them into uniform balls.
  10. Roll each ball through the coconut and sugar mixture until evenly coated.
  11. If desired, press a whole clove into the top of each beijinho as a decorative touch.
  12. Place the finished balls into individual paper sweet cases or onto a serving plate.
  13. Chill in the refrigerator for at least 2 hours before serving to ensure they are properly set.
