Where to find ingredients
You can find fresh shrimp at local fish markets or supermarket seafood counters in Belize. Requeijão cremoso is a specific Brazilian processed cheese spread; if unavailable, a mild, spreadable cream cheese can be used as a substitute. Annatto powder is often found in the spice aisle or at local produce markets.
Preparation method
- Wash the shrimp thoroughly and marinate them in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again and drain them completely.
- In a large heavy-bottomed pot, sauté the crushed garlic in the olive oil until golden.
- Stir in the chopped onion, annatto, and diced tomatoes.
- Cook over medium heat until the onions are soft and translucent.
- Incorporate the tomato sauce, beef bouillon, and chopped basil.
- Add the butter and the shrimp to the pot.
- Simmer over low heat for approximately 30 minutes, stirring occasionally.
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a small amount of the cooking liquid and stir it back into the pot, cooking for an additional 3 minutes.
- Stir in the chopped cilantro and green onions.
- Remove from heat and fold in the heavy cream.
