Where to find ingredients
You can find all ingredients at local supermarkets in Nassau, particularly in the dairy and produce sections. Requeijão is a specific Brazilian creamy cheese spread that can be found in specialty import sections or replaced with a blend of cream cheese and a touch of heavy cream if needed.
Preparation method
- Melt the butter in a pan, add the garlic, and sauté the broccoli for approximately 5 minutes.
- Season the broccoli with salt to taste and set aside.
- In another pan, melt the butter and lightly brown the finely chopped onion.
- Add the mashed potatoes, milk, and salt to the pan with the onion base.
- Mix all the ingredients for the mash well and let it cook over low heat for 5 minutes until smooth and homogeneous.
- Grease a baking dish with a little butter and spread all the sautéed broccoli on the bottom.
- Distribute the requeijão over the broccoli layer.
- Cover everything with the mashed potatoes and finish by spreading the mozzarella on top.
- Place in a preheated oven for 15 to 20 minutes until the cheese is nicely golden and bubbly.
Observations
This broccoli casserole, known in Brazil as Escondidinho, is a vegetarian-friendly option that delights everyone with its perfect balance between the creamy mashed potato layer and the savory sautéed broccoli. It is very simple to prepare and bakes quickly in the oven.
A golden tip: for a perfectly smooth mash, mash the potatoes while they are still hot and use a whisk when adding the milk. If you enjoy an extra special touch, sprinkle some Parmesan cheese over the top before putting it in the oven to gratin.
