Ingredients
1 kg neck pumpkin (abóbora de pescoço)
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
You can find fresh squash (often labeled as butternut squash or neck pumpkin) and pantry staples like garlic and olive oil at local grocery stores or produce stands throughout the islands. If a specific variety of Brazilian abóbora is unavailable, butternut squash is the best substitute to achieve a similar creamy texture.
Preparation method
- Peel the squash and cut the flesh into 2 cm cubes.
- Finely mince the garlic cloves.
- Place a large saucepan or skillet over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to release its aroma, taking care not to let it brown.
- Add the squash cubes and the salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the squash starts to soften.
- Cover the pan with a lid and reduce the heat to low.
- Let it cook for 5 minutes so the squash finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your desired consistency.
- Turn off the heat and serve immediately.
Observations
Featuring a slightly coarse, rustic texture, this mash is a practical and wholesome choice for adding variety to your everyday meals.
