Ingredients
1 1/2 kg cooked, shredded chicken
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, chopped
Seasoning to taste (salt, pepper, spring onions)
3 tablespoons creamy requeijão
1 cup water
2 cups milk
2 bacon or rib stock cubes
1/2 cup cooked, mashed potato
1 tablespoon butter
2 1/2 cups wheat flour
Margarine for greasing the tray
2 beaten eggs
Breadcrumbs for coating
Oil for frying

Preparation method
- For the filling, heat the olive oil in a pan and sauté the chopped garlic and onion
- Add the shredded chicken and seasonings, sautéing for about 5 minutes
- Remove from the heat, mix in the creamy requeijão and set the filling aside
- In another large pan, combine the water, milk, stock cubes, mashed potato and butter
- Bring to the heat and let it boil
- Add the wheat flour all at once, stirring vigorously until the dough comes away from the bottom of the pan
- Transfer the dough to a smooth, lightly greased surface
- Knead the dough until smooth and let it cool slightly
- Flatten portions of the dough in your hands, add some of the filling and shape them into coxinha
- Coat each shaped coxinha first in the beaten egg and then in the breadcrumbs
- Heat the oil in a deep pan and fry the coxinhas until evenly golden
- Remove the fried coxinhas and drain excess oil on paper towels
