2 kg ripe tomatoes (Roma or plum type), halved and seeded

Where to find ingredients
Look for fresh tomatoes, garlic, onions, basil, olive oil, cumin and salt at the produce market, supermarket vegetable section, or neighbourhood greengrocer. If tomatoes are scarce, ripe plum tomatoes are a practical substitute.
Preparation method
- Place the tomatoes in a saucepan and bring to the heat until they soften
- Pass the cooked tomatoes through a vegetable mill or a sieve to remove the skins and obtain a smooth purée
- In another saucepan, heat the olive oil
- Sauté the chopped onion and crushed garlic until lightly golden
- Add the processed tomato and the pinch of cumin to the pan
- Let it cook over low heat for 15 minutes
- Season with salt to taste
- Finish the recipe by adding the fresh basil before serving
