75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
Look for plantains and maize flour in the produce section and dry goods aisle of supermarkets, grocery shops, or open markets; butter, oil, salt, and black pepper are widely available in the dairy and spices sections.
Preparation method
- Trim the ends of the plantains and peel them
- Cut each plantain in half lengthwise
- Cut each half in half again lengthwise
- If the strips are very thick, cut them into three pieces
- Slice each piece of plantain into cubes about 1 cm in size
- Heat a large non-stick frying pan over medium heat
- Add the oil to the pan
- Add the chopped plantains to the pan and season with a pinch of salt
- Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelised. The time may vary depending on ripeness; riper plantains brown faster
- Lower the heat
- Add the butter cubes to the pan and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Add the maize flour a little at a time, stirring constantly with a spatula so it is well combined
- Cook for another 4 minutes, stirring all the time, until the farofa is crisp and nicely browned
- Turn off the heat and serve the farofa immediately
