Where to find ingredients
Look for the minced beef, olives, onions, garlic, cooking oil, salt, and black pepper at the wet market, the supermarket meat counter, and the produce aisle. If needed, use green olives as a substitute for the chopped olives.
Preparation method
- Heat a little oil in a pan
- Sauté the onion and garlic until lightly golden
- Add the minced beef to the pan
- Cook the beef, stirring occasionally, until all the liquid has evaporated
- Add the chopped olives to the sautéed mixture
- Season with salt and pepper to taste
- Mix everything very well
- Remove from the heat and let it cool completely before using as a filling
Observations
This filling is a real all-rounder in Brazilian cooking. The key to a good result is to sauté the seasonings well and make sure the beef is very dry and well seasoned before finishing with the olives.
