Mushroom Salad

Ingredients

8 button mushrooms
1 cup cooked spinach
4 imitation crab sticks
1 1/2 tablespoons light mayonnaise
1 tablespoon orange juice
Lemon juice to taste
Brandy to taste

Where to find ingredients

Button mushrooms are widely available in the produce section of most supermarkets. Cooked spinach can be prepared from fresh or frozen spinach, found in the frozen vegetables aisle or produce section. Imitation crab sticks (kani-kama) are often found in the seafood or refrigerated section of larger supermarkets, or in Asian and specialty grocery stores. Light mayonnaise and orange juice are standard grocery items. Lemon juice and brandy are also commonly found in most grocery stores.

Preparation method

  1. Let the imitation crab sticks thaw completely
  2. Cut the crab sticks into small pieces
  3. Slice the button mushrooms
  4. In a bowl, mix the sliced mushrooms with the cooked spinach and the pieces of imitation crab
  5. Add the light mayonnaise
  6. Incorporate the orange juice
  7. Season with lemon juice and brandy
  8. Mix everything gently
  9. Distribute the salad onto individual plates or bowls for serving

Observations

This recipe is an excellent option for a quick side dish or a sophisticated appetizer. The contrast between the mushrooms and the delicate flavor of the imitation crab sticks creates a balanced and very tasty dish.
