Ingredients
2 cups rice, preferably long-grain or agulhinha
150 g mozzarella cheese, sliced, which can be substituted with prato cheese or colonial cheese
2 beef bouillon cubes, which can be found in supermarkets in the seasonings or ready-made broth section
2 tablespoons margarine or butter
4 ripe tomatoes, cut into thin slices
1 teaspoon dried oregano
150 g mozzarella cheese, sliced, which can be substituted with prato cheese or colonial cheese
2 beef bouillon cubes, which can be found in supermarkets in the seasonings or ready-made broth section
2 tablespoons margarine or butter
4 ripe tomatoes, cut into thin slices
1 teaspoon dried oregano
Where to find ingredients
Look for the ingredients at any supermarket or grocer in Trinidad and Tobago: rice in the grains aisle, cheese at the dairy counter, tomatoes in the produce section, bouillon cubes and dried oregano in the seasonings aisle, and margarine or butter in the dairy case. If needed, a mild melting cheese can be used as a substitute for mozzarella.
Preparation method
- Dissolve the beef bouillon cubes in four cups of boiling water, stirring until completely dissolved
- Add the rice to the bouillon water and cook over low heat until tender, about twenty minutes
- Once cooked, add the margarine and gently mix with a fork to loosen the grains
- Transfer the rice to a medium baking dish and spread the tomato slices over the top
- Sprinkle the oregano over the tomatoes and cover everything with the mozzarella slices
- Bake in a preheated 200°C oven for about ten minutes, or until the cheese melts and turns lightly golden
- Serve hot, with salad or as a main dish
