Where to find ingredients
Look for the ingredients in any supermarket produce section and grocery aisle: onion, parsley, olive oil, bay leaf, rice, and salt. If needed, parsley can be substituted with another fresh herb, but parsley is ideal for this recipe.
Preparation method
- Peel and chop the onion into small pieces
- Wash the parsley, dry it well, and chop it roughly
- Put a little more than 2 cups of water in a kettle and bring it to a boil over low heat
- Heat a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt and sauté for about 2 minutes until the onion is soft
- Add the bay leaf and the rice to the pan
- Stir continuously for 1 minute to make sure the grains are coated in oil
- This helps keep the rice fluffy after cooking
- Measure exactly 2 cups of boiling water and add it to the rice
- Season with the remaining salt and mix well
- Increase the heat to medium
- Do not stir from this point on
- When the water reaches the level of the grains, lower the heat and cover the pan partially
- Cook until all the water has been absorbed
- Check that the bottom of the pan is dry by using a fork to separate the grains
- Turn off the heat
- Keep the pan covered for 5 minutes to finish cooking in the steam
- Use a fork to loosen the grains, stir in the chopped parsley, and mix gently
- Serve immediately
Observations
This dish is a simple way to lift everyday white rice, adding more flavour and colour to the table with very little effort.
