Where to find ingredients
You can find fresh produce like carrots and onions at local farmers' markets or the produce section of neighborhood grocery stores. Use any high-quality long-grain white rice available at your local supermarket.
Preparation method
- Wash and peel the carrot.
- Grate the carrot using the fine side of your grater.
- Finely dice the onion.
- Heat slightly more than 3 cups of water in a kettle over low heat until it reaches a boil.
- Warm a medium-sized pot over low heat.
- Add the olive oil to the pot.
- Add the diced onion and grated carrot to the oil.
- Season with the salt.
- Sauté the vegetables for about 2 minutes until they soften slightly.
- Add the rice and the bay leaf to the pot.
- Stir well to ensure every grain is coated in the olive oil.
- Measure exactly 3 cups of the boiling water and pour it over the rice mixture.
- Give it one last stir and increase the burner heat to medium.
- Refrain from stirring the rice from this point on.
- Wait until the water level drops to meet the surface of the grains.
- Reduce the heat to the lowest setting.
- Cover the pot with the lid slightly ajar.
- Cook until all the water has been fully absorbed.
- Check for doneness by inserting a fork into the bottom of the pot to ensure all moisture is gone.
- Turn off the heat.
- Keep the pot covered for another 5 minutes to allow the steam to finish the cooking process.
- Gently fluff the grains with a fork.
- Toss the carrots through the rice gently to combine.
- Transfer to a serving bowl and serve immediately.
Observations
This dish is a fantastic way to brighten your dinner plate with natural color and nutrients. The secret to achieving perfectly fluffy grains every time lies in thoroughly toasting the rice in the aromatic base before adding the boiling water.
