Ingredients
2.5 litres of cold water
500 g of green beans (feijão verde)
2 beef bouillon cubes

2 1/2 cups of long-grain white rice
150 g of queijo coalho, thinly sliced

Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with 2.5 litres of cold water and the bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the hot oil until golden brown.
- Add the rinsed and drained rice along with the chopped cilantro to the pot, sautéing for a few minutes to coat the grains.
- Incorporate the cooked beans along with the cooking liquid into the rice mixture.
- Stir all the ingredients well, cover the pot, and cook on low heat until the rice is tender and the consistency is moist and creamy.
- Carefully arrange the slices of queijo coalho over the top of the rice.
- Cover the pot again and let the steam melt the cheese for a few minutes.
- Serve the Baião de Dois warm, optionally accompanied by fried or roasted carne-de-sol.
