Homemade Baked Pastel with Ground Beef (Pastel assado)

Ingredients

1 kg all-purpose flour
500 g vegetable shortening
1 teaspoon salt
290 ml chilled guaraná soft drink
1 kg ground beef
Salt and seasonings to taste for the beef
1 egg yolk for brushing

Where to find ingredients

Look for the ingredients in the flour aisle, the baking-oil section, the soft drinks shelf, the meat counter, and the eggs section at local supermarkets or neighbourhood grocery shops. For the filling, a butcher can also mince the beef for you.

Preparation method

  1. In a large bowl, mix the all-purpose flour, vegetable shortening and salt
  2. Add the chilled guaraná soft drink little by little and mix until you have a smooth dough that holds together. Do not overwork it
  3. Divide the dough into portions and roll each one out to assemble the pastels, shaping discs
  4. Prepare the filling by mixing the ground beef with salt and your preferred seasonings. Do not cook the beef beforehand
  5. Place the filling on one half of each dough disc and fold over to close, forming the pastels
  6. Arrange the pastels on a baking sheet
  7. Brush the surface of each pastel with the egg yolk
  8. Bake in a preheated oven at high temperature (approximately 200°C)
  9. Bake until the pastels are golden and the dough is cooked through. To check doneness, insert a toothpick into one; if it comes out clean and the dough is baked, they are ready

Observations

Baked pastel is a classic of Brazilian cooking, a practical and tasty option for any occasion. Unlike fried pastel, this oven-baked version has a drier crust and is just as flavourful, making it ideal as a snack or appetiser at family gatherings and festive get-togethers.

This recipe uses simple ingredients and an accessible method, delivering a final result that suits every palate. The dough includes chilled guaraná soft drink, a special touch that helps keep it light and tender, while the well-seasoned ground beef filling provides the characteristic flavour.
