Where to find ingredients
Look for the ingredients in the dairy aisle, bakery section, produce section, butcher counter, and cooking oil aisle at supermarkets or local grocery shops. If needed, use breadcrumbs from the baking aisle and ground beef from a trusted butcher as a substitute source.
Preparation method
- In a saucepan, mix the milk, mayonnaise, salt and parsley and scallions
- Bring to medium heat and let it come to a boil
- Once the mixture starts boiling, add the flour a little at a time, stirring constantly
- Keep cooking and stirring until the dough pulls away completely from the bottom of the pan, forming a smooth mass
- Remove the dough from the pan and spread it over a clean, cool surface (such as marble or a countertop) to cool
- In another pan, heat the vegetable oil over medium heat
- Brown the chopped onion in the oil
- Add the ground beef and salt, sautéing well until the meat is cooked and there is no excess liquid
- Let the beef filling cool slightly
- Fold the sautéed ground beef into the cooled croquette dough and mix well until the ingredients are fully combined
- Shape the croquettes into the desired form
- Set up a breading station: beat the eggs in one bowl and place the breadcrumbs in another
- Dip each croquette first in the beaten egg and then in the breadcrumbs, making sure they are well coated
- Heat plenty of vegetable oil in a deep pan or fryer
- Fry the croquettes in hot oil until golden and crisp
- Remove the croquettes with a slotted spoon and place them on paper towels to drain excess oil
- Serve the croquettes hot as an appetiser
