Look for the potatoes, butter, eggs, flour, and spices in the produce section, dairy aisle, baking aisle, and spice shelf of a supermarket or at a local fresh market.
Preparation method
- Peel the potatoes and place them in a saucepan with water
- Bring to a boil over high heat
- Add salt and cook for about 20 minutes, or until tender
- Drain off all the water and pass the potatoes through a ricer
- Mix the butter and egg yolks well into the mashed potatoes
- Season with salt, black pepper, and nutmeg, stirring to combine the flavours
- Transfer the dough to a piping bag fitted with a large tip
- Preheat the oven to 180°C
- Grease a baking tray with butter and dust it with flour
- Pipe potato roses onto the baking tray, pressing the piping bag
- Start in the centre and move in a spiral to form the rose
- Leave space between each portion on the tray
- Bake in the preheated oven for about 30 minutes, or until the surface is lightly golden
- Remove from the oven and serve immediately
Observations
These rosettes have a soft texture and a delicate shape, making them ideal for pairing with main dishes or serving as a snack. Using a piping bag gives them an elegant, even finish.
