Easy Creamy Carrot Cake (Bolo de cenoura)

Ingredients

1/2 cup oil
3 medium carrots, grated
4 eggs
2 cups sugar
2 1/2 cups wheat flour
1 tablespoon baking powder
1 tablespoon butter
3 tablespoons cocoa powder
1 cup sugar
1 cup milk

Where to find ingredients

In Palau, carrots, eggs, milk and butter are usually found in supermarket produce and chilled sections, while wheat flour, sugar, baking powder and cocoa powder are in the baking aisle. Use plain cocoa powder rather than drinking chocolate when possible.

Preparation method

  1. In a blender, blend the carrots, eggs and oil until smooth
  2. Add 2 cups of sugar to the mixture and blend for another five minutes so the batter becomes very smooth
  3. Transfer the cream to a bowl
  4. Add the wheat flour gradually, stirring well
  5. Add the baking powder and mix gently with a spoon so the cake rises evenly
  6. Pour the batter into a greased and floured pan
  7. Bake in a preheated oven at 180°C for about 40 minutes, or until a skewer comes out clean
  8. While the cake is baking, prepare the topping in a saucepan
  9. Add the butter, cocoa powder, 1 cup of sugar and the milk
  10. Cook over medium heat, stirring all the time, until creamy
  11. Remove the cake from the oven and pour the hot topping over it while it is still warm
  12. Let it cool a little before serving

Observations

This carrot cake is a favourite across Brazil, known for its soft crumb and bright colour. Preparing the batter in a blender makes it a handy choice for everyday baking or special occasions. The creamy chocolate topping balances the sweetness and texture of the cake, giving you a dessert that is hard to resist.

It is ideal when you want something sweet, quick and full of childhood comfort. Serve it with freshly brewed coffee and enjoy a lovely break.
