Where to find ingredients
You can find all these pantry staples at any local supermarket or general food store. The 'orange juice' should be freshly squeezed for the best aroma. For 'breadcrumbs' (farinha de rosca), check the baking or dried goods aisle; if unavailable, you can finely crush dry crackers or plain biscuits as a realistic local substitute. Ensure you use fine-grade 'icing sugar' to achieve a smooth finish on the decoration.
Preparation method
- Blend all the ingredients together in a blender until you have a smooth, well-combined batter
- Grease a 36 x 24 cm baking tray with butter
- Line the bottom and sides of the tray with parchment paper
- Brush butter over the parchment paper and dust lightly with breadcrumbs
- Preheat your oven to a low temperature
- Pour the batter evenly into the prepared baking tray
- Bake for 50 minutes or until the top is lightly golden
- Spread a clean kitchen towel out on a flat surface
- Sprinkle sugar generously over the entire length of the towel
- Carefully flip the baking tray over onto the towel to turn out the sponge cake
- Gently peel away the parchment paper
- Using the kitchen towel, carefully roll up the sponge from the shorter side to create the swiss roll shape
- Transfer your finished roll onto a serving platter
- Dust with icing sugar and finish by garnishing with the orange peel strips
Observations
A wonderfully simple and quick recipe that yields a delicate, aromatic sponge cake perfect for afternoon tea or as a fuss-free treat for special occasions.
