Beef and Olive Pastry Filling (Recheio de pastel de carne com azeitona)

Ingredients

400g minced beef
100g chopped olives
1 onion, chopped
Garlic cloves, to taste
Oil for sautéing
Salt, to taste
Pepper, to taste

Where to find ingredients

Look for minced beef, olives, onions, garlic, oil, salt, and pepper at the butcher counter, produce section, and pantry aisles of any well-stocked supermarket or neighbourhood grocery. If needed, use canned or jarred chopped olives as a substitute for fresh chopping.

Preparation method

  1. Heat a drizzle of oil in a pan
  2. Sauté the onion and garlic until lightly golden
  3. Add the minced beef to the pan
  4. Cook the beef, stirring occasionally, until all the liquid has evaporated
  5. Add the chopped olives to the sautéed mixture
  6. Season with salt and pepper to taste
  7. Mix everything very well
  8. Remove from the heat and let it cool completely before using as a filling

Observations

This filling is a real all-rounder in the Brazilian kitchen. The key to good results is to sauté the seasonings well and make sure the beef is nicely dry and well seasoned before finishing with the olives.
