Grape Mousse (Mousse de uva)

Ingredients

250 ml grape juice
1 packet grape-flavored gelatin
6 egg whites
10 tablespoons sugar
300 ml table cream (creme de leite)
250 ml grape juice (for the sauce)
5 tablespoons sugar (for the sauce)
2 tablespoons cornstarch (for the sauce)

Where to find ingredients

You can find all necessary ingredients at local supermarkets like SM Supermarket, Robinsons Supermarket, or Landmark. Table cream (creme de leite) is widely available in the canned goods or dairy aisle. If grape gelatin is unavailable, you can substitute it with unflavored gelatin and a splash of extra grape concentrate.

Preparation method

  1. Bring one cup of grape juice to a boil in a saucepan.
  2. Remove from heat and stir in the grape-flavored gelatin.
  3. Mix thoroughly until completely dissolved and set aside to cool.
  4. Whisk the egg whites in a mixer until stiff peaks form.
  5. Gradually add the 10 tablespoons of sugar while continuing to beat until a firm meringue consistency is achieved.
  6. Gently fold the cooled grape juice and gelatin mixture into the whipped egg whites.
  7. Add the table cream and mix softly with a spoon until combined.
  8. Transfer the mixture into a round mold previously greased with unsalted margarine.
  9. Refrigerate for 4 hours until firm.
  10. Prepare the sauce only after unmolding the mousse.
  11. Combine the remaining grape juice, sauce sugar, and cornstarch in a small pot over low heat.
  12. Stir constantly until the sauce thickens slightly.
  13. Let the sauce cool down slightly before drizzling it over the unmolded mousse.
  14. Garnish with mint leaves and fresh grapes before serving.
  15. Chill for another 30 to 40 minutes before plating.

Observations

This recipe yields a refreshing and sophisticated treat, perfect for capping off family gatherings. The secret to its success lies in achieving the right consistency for the whipped egg whites and allowing sufficient time for the dessert to set in the refrigerator.
